Let me tell you something: couscous is delicious. I could eat it any given part of the day, any day... This week I made couscous a different way then I used to. It was yummy, so I might as well share the "recipe" with you! You have to taste this!
Things you'll need: (4 people)
» 300 gr. couscous
» 300 ml. boiled water
» olive oil
» salt & pepper
» 2 cups of golden and/or dark raisins (I used both)
» 1 small onion
» 1 zucchini
» 2 tomatoes
» a pack of sun-dried tomatoes
» 200 gr. of feta cheese
» 1/2 lemon
» optional: 1 Granny Smith apple
Let's get started!
1. Add the boiled water to the couscous and the raisins. Add a little bit of olive oil. Let it stand for 5 minutes.
2. In the meantime chop the onion, zucchini, sun-dried tomatoes, feta cheese and apple. Chop the tomatoes as well, but remove the seeds. (Or your couscous will become too watery.)
3. Put your vegetables and couscous together. Give it a good stir. Then add the juice of 1/2 lemon. Add pepper & salt.
4. And you're done! Bon appétit!
This is such an easy dish to prepare, yet perfect to welcome back the sun! :-)
